In a story I'm working on, I'd like to know just how exactly would the Valar address the Maiar (and vice versa), especially the ones they are closest to? As younger siblings or perhaps cousins?
Ex: Manwë and Eönwë. Would Manwë be more likely to call him "child", "little brother"or "cousin" -- especially in an informal setting?
(Also, I vaguely remember reading that Eönwë (under a different name) was going to be the son of Manwë but that this idea was later dropped. At least, I hope I am remembering it right. I could very easily be wrong since I'm not sure exactly where I read it and I don't have anything besides the Silm handy.)

I don't about forms of address, but you are remembering this correctly; Eönwë was at one point Fionwë, son of Manwë. It's in The Shaping of Middle-earth.

The notion of the Valar and Maiar being kin of sorts survives into the published Silmarillion, at the very least. Melian is described as "akin before the world was made to Yavanna herself" in Of Thingol and Melian, so your idea doesn't seem implausible to me.
The Lost Tales also have the concept of the Maiar being the children of the Valar, and I checked there for forms of address, but with very little success. If an address is used at all (I didn't read very closely and only found three instances of it, but always from one Vala to another) it's usually "O [insert title here; i.e. Tuivana, Palúrien, Poldorea]".

I thought about this on and off through the day. I think that they would refer to those maiar who they know well by name or affectionate monikers. It is unlikely that they will be comfortable with all of the maiar, however, so those who are less well-known to them will undoubtedly be referred to in a more formal manner. I don't know if this is any help or not, and it is rather non-specific for my having thought about it for so long, but it's the best I can do right now.
